Race Fuel Carb-loading Marshmellow
Elevate your pre race carbohydrate loading with high-Carb Marshmallows, not only providing an efficient glycogen store top up but a concentrated source of electrolytes.
Ingredients:
- 3/4 cup PURE Race Fuel
- 2 Tbsp caster sugar
- 3 Tbsp honey
- 1 Tbsp Pineapple PURE Electrolyte Hydration
- 1/4 cup unflavoured gelatin powder
- 2 tsp cornflour
- 1/2 cup water for blooming gelatin
- 1/4 cup water for the saucepan
- 1 tsp salt
Dusting mix:
- 1 cup icing sugar
- 1 cup cornflour
Method
- Bloom gelatin: Mix 1/4 cup gelatin with 1/2 cup cold water and let stand 5–10 minutes.
- Make syrup: In a saucepan combine Race Fuel, pineapple electrolyte, sugar, honey, cornflour, and 1/2 cup water, then heat until dissolved and bring to 115 °C (or ~3 minutes of gentle bubbling).
- Combine: Remove from heat and stir in the bloomed gelatin until fully melted and smooth.
- Whip: Transfer to a large bowl and beat on high until pale, thick, glossy, and ~tripled in volume.
- Prepare tray: Line a 30 × 20 cm tray and heavily dust with the icing sugar + cornflour mix.
- Set: Pour mixture into the tray, dust the top, and let set uncovered for 6 hours or overnight in a cool, dry place.
- Cut: Remove, cut into cubes with an oiled knife, and coat each piece generously in the dusting mix.
- Store: Keep in an airtight container with extra dusting mix (silica gel optional).
If the marshmallows become moist or sticky at any point, simply re-coat them in more of the dusting mix.
